Any good HEALTHY recipes. I usually only get certain grocerys otherwise my food goes to waste...?

Here are a couple of ideas:


Inside of foil, make a layer of chopped onions, parsley, and celery with a nice piece of salmon over the top. Sprinkle it with dill spice and the juice from a lemon slice. Bake this inside the foil until it is thoroughly cooked.


This will stay nice and moist and taste delicious!





Also, for the ground turkey, you can make a turkey ';burger'; with the wheat bread, sprouts, avacado, and mayo or mustard.





You may also want to try making a big soup or stew - try adding a couple of extra vegetables (maybe onions, celery, carrots) to your broccoli and use chicken or beef broth. You can add salmon or chicken or any meat of your choice. You can use tomatoes and garlic if you like. When you let this cook for a long time, it can be really delicious, and you can keep some in the fridge for the next day, too.
When I find that I have leftovers in the fridge that I hate to throw out - I take it and make a stew or a soup out of it. And sometimes it ends up to be such a mishmash I call it ';stoup'; !!!

Soy food recipes for babies.?

Just found out my baby is allergic to formula and needs to be on a soy formula. Now i have the problem on what to feed him. He has his veggies for tea but i'm not sure what he can have other then that. Would love any help on idea's what else i can give him. he's only 4 months so makles it hardSoy food recipes for babies.?

You need to speak to his doctor. Did his doctor give the ok to give him food so young? Rice cereal is usually the best tolerated and you can use some of the soy formula to mix it, and once he has had things like applesauce, strained pears and peaches you can mix those in with it.
Breast milk is the best.





Commercial soy milks also contain vitamin D2 (ergocalciferol), the ineffective vegetarian form of vitamin D that offers few of the benefits of true vitamin D3 (cholecalciferol) and has been linked to hyperactivity, coronary heart disease and allergic reactions. Even the cheapest dairy milks sold in supermarkets use vitamin D3, but soy milk manufacturers use D2, the only form accepted by soymilk-swigging vegans.





Finally, soy milk is high in sugar, a well known bone hazard. Most brands add between 1 teaspoon and 1 tablespoon per glass.
Most likely he is allergic to the milk in the formula. You can feed him everything that does not contain milk or lactose...and all the other no-no's for kids like chocolate, nuts and honey.
Just don't give him anything with dairy.





At 4 months he shouldnt be having anything other than formula anyway, so it shouldnt be something youre worried about.





My son is allergic to dairy, and i just don't give it to him. I try to limit our soy intake as much as possible, because there is alot of controversy around it. Stick to fresh fruits and veggies (after your babe is ready for solid food after 6 months.) and just stay away from pre-packaged things... they are more likely to have hidden dairy (whey, ';natural flavors';, casein...)

You can make a curry dish with chicken! My mom makes it alot.





Green curry paste


1 can coconut milk


2-3 chicken breast


Basil


Canned bamboo


fish sauce





Just sautee the chicken tilll some what brown then pour coconut milk over and stir in some water if its to thick, then add curry paste to taste. Also add your basil and bamboo and let it simmer for about 15 mins or so, then add fishs sauce to taste! Its best served with white jasmine rice, which your just pour the curry over the rice!

Easy Civil War food recipes?

Hello, For my school project I'm making a Civil War dish, are there any cheap and easy ideas? ThanksEasy Civil War food recipes?
If you want the classic civil war ration, make some Hardtack. It's simple and authentic.





Army Hardtack Recipe





Ingredients:





* 4 cups flour (perferably whole wheat)


* 4 teaspoons salt


* Water (about 2 cups)


* Pre-heat oven to 375掳 F


* Makes about 10 pieces





Mix the flour and salt together in a bowl. Add just enough water (less than two cups) so that the mixture will stick together, producing a dough that won鈥檛 stick to hands, rolling pin or pan. Mix the dough by hand. Roll the dough out, shaping it roughly into a rectangle. Cut into the dough into squares about 3 x 3 inches and 陆 inch thick.





After cutting the squares, press a pattern of four rows of four holes into each square, using a nail or other such object. Do not punch through the dough. The appearance you want is similar to that of a modern saltine cracker. Turn each square over and do the same thing to the other side.





Place the squares on an ungreased cookie sheet in the oven and bake for 30 minutes. Turn each piece over and bake for another 30 minutes. The crackers should be slightly brown on both sides.





The fresh crackers are easily broken but as they dry, they harden and assume the consistentency of fired brick.Easy Civil War food recipes?

SAUSAGE AND APPLES





This old Virginia dish is easy and delicious. Start with about a pound of sausage meat. You can obtain the real stuff at most butchers but I suppose Jimmy Dean will do in a pinch. Form into patties and fry lightly in a pan until just browned. Remove the sausage, pour our the fat (not in the fire) and melt some butter in the pan, enough to barely cover the bottom. Core and slice three apples to a thickness of about 1/4 inch and place in pan setting it over a low heat. When apples have softened slightly add a half cup of brown sugar and a tablespoon of cinnamon. As soon as the sugar has mixed with the butter and formed a thick syrup add back the sausage and cook for another ten minutes or so.

I've never had little dumpling (i assume you mean samosa's) with ground hamburger at an Indian place, maybe ground lamb or potato, but certainly not beef (they generally don't eat beef btw, they're mostly hindu, against religion). I'd try Vah Chef, he's a Indian chef who started doing video recipes on youtube, he now has his own site. His recipes are authentic and you can watch him do them to see what you really need to do to them properly.

Nachos:


Place some tortilla chips on a baking sheet with tin foil, then sprinkle some shredded cheese over the chips. Put the baking sheet in the oven and broil them for about five minutes. Take them out and add any other toppings you desire. Olives, salsa, etc. Enjoy!

Delicious Chicken Empanadas





Ingredients


3 cups chopped, cooked chicken


1 (8-ounce) package shredded Colby and Monterey Jack cheese blend


4 ounces cream cheese, softened


1/4 cup chopped red bell pepper


1 jalapeno, seeded and chopped


1 tablespoon ground cumin


1 1/2 teaspoons salt


1/2 teaspoon pepper


1 (15-ounce) package refrigerated pie crusts


Water





Directions


Preheat oven to 400 degrees F. Lightly grease a baking sheet. In a large bowl, combine the chicken and next 7 ingredients. Unroll 1 piecrust onto a lightly floured surface. Roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining piecrusts, making 12 to 15 circles total. Arrange 1 round on a clean, flat surface. Lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month). Arrange empanadas on the prepared baking sheet. Bake for 15 minutes.
Monkey Bread





3 (10 oz) packages refrigerated biscuit dough


3/4 cup white sugar


3 Tbsp. ground cinnamon


1/2 cup margarine


3/4 cup brown sugar





Mix together 3/4 cup sugar and cinnamon.


Quarter the biscuits with kitchen shears. Dip shears in water after each cut to keep the biscuits from getting too sticky. Dip biscuits into sugar mixture, and place in a greased tube pan. Do this until all biscuits are used.


Melt butter or margarine, and mix in brown sugar. Pour mixture over biscuits.





Bake in a preheated 350潞 F oven for 30 to 35 minutes.

    how old is baby? start with rice ceral. then try stewwed apple, peel and slice about 4 apples place in some cold water to just cover and then simmer until the apple is really soft and puree in a food processor or blender or mash with a vegetable masher. you can do the same with potatoes, pumpkin, broccli, peas (however this is for older babies with some teeth and the peas need to be over cooked), carrots whatever veggies (spinach) you like as long as they are pureed. I live in Australia and one of our fav spreads is vegemite sometimes I add a little of this. if baby is 1 yeatr you could add some finely sliced and diced pieces of chicken or some savory mince. ( mince onion: dice up some onion and fry till soft then addand brown mince unitl cooked and you can puree if you want but a few lumps wont hurt.)I need homemade baby food recipes.?
    I your baby is young and just starting solids, you don't need to do anything but make sure the foods are pureed enough. For instance, boil carrots, (adding nothing to the water) and blend. That's it. No seasoning or anything. Luck!

    Did you know you can buy table top mini ovens? My parents just got one and it's fab (they use it for cooking at the table which is so cool, just sitting there eating your first course and watching your pudding going all yummy).





    They got a Kenwood but I think others do them. I'm not talking here about something that is designed to go in a kitchenette, but something designed to go on the dining table. It's really designed for cooking breakfast but you can use it for all sorts of things and perfect for one person.





    You might get one on ebay.





    Otherwise you can cultivate the art of one-pot cooking doing lots of stir frys, hob top stews.

    i have 3 daughters-they were SO picky when they were toddlers!!! here are some ideas for ya





    chicken sticks:





    cut up chicken breasts into strips


    roll in some plain yogurt then roll in crushed cereal (honey nut cheerios or honey bunches of oats cereal worked great for me). bake on lighty greased cookie sheet at 400 degrees for about 20 mins.





    for added fun, shove a popsicle stick into the strip before baking to make chicken on a stick!! kids love this.





    pinwheels:





    take a large tortilla, spread cream cheese on it then add lunch meat (turkey or ham work well) and some sliced cheese (any kind). if your child likes them-you can add chopped pecans or walnuts, and/or sliced cucumbers. roll the tortilla up and then slice into 1'; slices to make the pinwheels. serve with dipping sauce.





    mini english muffin pizzas





    -take a toasted english muffin and spread pizza sauce on top. top with shredded mozzarella cheese and broil in oven until cheese is bubbly and golden brown. really easy and kids love it.





    ';pigs in a blanket'; my kids still love this one





    take hot dogs and roll them up in a crescent roll. bake at 375 for 10-15 mins or until the bread is golden brown.





    stuffed pita pocket





    -take a whole wheat pita pocket and fill it with strips of carrots, celery, cucumber, and chicken strips/ham strips. serve w/ranch dressing.





    easy fried rice (my girls loved this when they were small)





    take precooked white rice and saute in skillet w/1 tbsp of oil. cook for 2 mins. push the rice to one side of the skillet. on the open side, scramble 2 eggs then mix with rice. add precooked, diced chicken or beef and some diced carrots and celery. cook for an additional 1-2 mins. serve w/some soy sauce.





    with toddlers-50% of the battle is presentation-if the food looks fun or colorful to eat, they are more likely to try it.





    I served my daughters cut up veggies and fruit in an empty ice cube tray-she loved this!! use a few different types of dipping sauces in a few of the slots too.





    -use cookie cutters to cut up sandwiches-kids love the fun shapes.





    -make faces/shapes w/their food. for example-my kids liked having their ';butterfly'; for snack. to make:





    take 1-2 mini carrot sticks for the body. then use 4 apple slices to make the wings and some thinly sliced cucumber for the attenas. super cute!!

    im 12 yrs old and i really like to cook. I make more than half of the meals (dinner meals) my family eats. Im sorry i dont have any recipes for you, ive never served toddlers. But i do know that you can just give them parts of sonmething you would eat. My sister used to like yoghurt and broccoli when she was young, and one day they were both in bowls on her high chair plate, and she mixed them together. Since then she always did. (not now, bu when she was little) i know that didnt really help you, just a little advice =)

    1 russet potato, peeled and thinly sliced


    1 tablespoon whole rosemary needles


    1 teaspoon kosher salt


    1/4 teaspoon black pepper


    Cornmeal for the skillet


    1 package (about 1 pound) refrigerated pizza dough





    Heat oven to 450掳 F.





    Heat the oil in a large cast-iron skillet over medium heat. Add the onion and cook until golden, 5 to 7 minutes. Transfer the onion to a bowl. Add the potato, rosemary, salt, and pepper and toss; set aside.





    Wipe out skillet, turn it upside down, and sprinkle the bottom with the cornmeal. Place the dough on a work surface. With your hands or a rolling pin, gently shape the dough into a round the same size as the skillet. Place the dough on the bottom of the skillet. Arrange the potato mixture evenly over the dough, leaving a 1-inch border. Bake until the crust is golden brown, about 20 minutes. Slice into wedges.








    Yield: Makes 4 to 6 servings

    Any simple baby food recipes? I'm not a cook!?

    My daughter is 9 1/2 months old and I have been feeding her baby food jars but it's working out quite expensive the more she is beginning to eat.


    I'm not a very good cook but would love to be. I've attempted a couple of things and failed and it's knocked my confidence a bit.

    Anyone got some simple ideas to help me get me started, I must have a really crap imagination, I'm feeling a bit lost.

    One of my friends makes a batch of rice, boils a chicken breast, steams some vegetables on top of the rice as it's cooking. Once everything is nice and cooked soft, she throws everything in a blender and adds water as necessary to get a consistency appropriate for her baby.

    u can really feed her anything that you eat..is what i was told just make sure to puree it..i make my daughter spaghetti alot and she loves it..also mashed potatos with gravy...pudding..the reason i puree still is because my little is is 10 and a half months old now and still doesnt have any teeth..they are comming tho =)
    The best starter for young ones is strips of toast, lightly buttered. They can suck away on it and learn how to chew it too, mine loved it. Also little pieces of cut up banana put on their tray, they can pick at them, learn to put in their mouth ect. mashed carrot, mashed banana, cooked apple, mashed potato with a little gravy, mine loved this too. just keep it really simple, they becomne less fussy this way. Dont have to serve up 100 ingrediants, at this age they happy to try anything thats new. You will soon discover what she likes and doesnt. Little soft lumps and Im sure she will soon pick it up.
    i wouldnt do peanut butter or honey until after a year, but let her try everything you eat (at 9 mo. my daughter loved tacos with hot sauce) doing this will also prevent her from being a picky eater, i have 6 kids and one of my daughters dont like mayo thats the only thing in all my kids, dont be afraid to try things, just do it carefully.
    i never bought baby food from the store and have always made my own...its very simple and takes about an hour maybe once a week, or every two weeks depending on how much you make...





    i would just get some potatoes, a sweet potato, stalk of broccoli, a few carrots, zucchini, brussel sprouts and any other vegetable that i wanted, give everything a good wash and peel if appropriate then steam everything in a stove-top steamer. sometimes i would add stuff like spinach at the end as it didnt require long to cook. i would also steam maybe a skinless chicken breast or a few tenders. once everything is soft i would just put it in a big bowl or pot and mash with a potato masher...how much depended on my daughters age...fairly fine when she was younger and more chuncky as she got older. i would tear apart the chicken and stir that through. then i had a lot of little plastic freezable containers and i would just divide the food into those containers and it was done....





    i never added salt, pepper or any kind of seasoning and you can make the food with any combination of vegetables that you like. my daughter is now three and eats everything...she loves veggies and eats ';white and green trees'; first at dinner time if they are on her plate....

    My children are in their 20s. I used to give them mashed banana, chopped soft boiled egg with bread, potatoes, veg (carrots, turnip, broccoli etc.) mashed with gravy from roast. Scrambled egg, macaroni cheese, soup.

    I would defiantly start introducing finger foods . let her make a mess and play with the food at first she will soon learn that it's tasty.fruit is a great finger food something like banana which is mushy already.





    All I used to do for my daughter was use mashed potato as a base for most meals and add fish .vegetables etc . Make the food lumpy /mushy.


    Her favourite was mash potato mixed with Tuna . So to answer your question yes Tuna is fine . your daughter can eat nearly everything you eat just make it lumpy for her . I would suggest you avoid nuts though.

    a really cheap effective thing to do is to at the beginning of each week boil a few pans of vegetables and mash them up scoop them into icecube trays and freeze them this way you can also keep a maintained level of how much food your daughter has i.e 3,4,5,6 cubes of veg a day you can also do this with potatoes


    i think the only thing they recommend children under 1yr dont eat is eggs unless they are hard boiled

    Meal Planner Book. It has lots of advice in there and great ideas for different age ranges. I don't go exactly by the recipes I just get ideas from it. Alternatively blend up a bit of your dinner as long as it has no salt in it. She will probably not mind as what you eat comes out in the breast milk anyway, so if you eat spicy, she probably like something spicy. Steer clear of foods which you might be intolerant to until she is a year old, as you could pass it on. Hope this helps.
    there is plenty of finger food products out there that you can do in a microwave oven... fish fingers, chicken nuggets, potato balls..chips.. you can even give her raw foods like cauliflower, broccoli, carrots.. just sort of use your imagination when it comes to frozen goods at the supermarket.. otherwise try spaghetti in a tin with a piece of toast.. anything like that.. do you know how to cook a basic meal. such as potato and veges with meat on the side.. as bubs will need something like that some times.. i wish you and bubs the best of luck..

    Recipe: Mexican rice





    In a deep pan pour 3tbs of corn oil , the pot must be on medium heat. After it gets hot add a cup of long grain white rice and you are going to fry it until it gets light brown make sure that before you start frying cut a piece of onion and celery into squares. You do not need a lot of the onion and celery it should be like a hand-full the onion and the celery put together. Okay when the rice is light brown add the onion and celery and fry for like 5min. Then you are going to add half a can of tomato sauce(small tomato can). Stir all the ingredients (rice, onion, celery and tomato sauce for 2min. Then add a cup of water. After you add the cup of water you need to add 1tbs of chicken bullion and like three leaves of cilantro just the little buds no sticks. You need to cover your pot and let if boil for like 20min. You need to constantly be watching that it does not need water because if you open the lid and it looks like its sticking to the bottom of the pan that is not good. Just add a little bit more of water until fully cooked. Hints: Don't let it over-cook because it will be too pasty . Keep an eye on it. You will know when it is ready (if you run a for over the top and the rice litteraly is not sticky and falls on top of the other rice its perfect.





    Beans: Put a big pot of water to boil.


    Get a bag of pinto beans and clean them , make sure there are no rocks or old beans in the batch you are going to add to the pot of water . Once you clean them run them thruogh cold water rinse them out and add to your boiling water. Add a tbs of corn oil and 3-4tbs of salt. Boil for 3-4hrs. Keep in mind that you need to keep an eye on the beans because if they ran out of water they will burn and you do not want your house smelling bad. If you notice that it is running low on water add another cup or two. After 2-3hrs take a spoon and spoon out a bean and check if it is soft. Squish it between your fingers and if it smooshes through they are done. If you are going to give beans you your baby you might want to take the skins off because she might get diareeah but if you want to leave them on its ok. Her system will get used to them.





    Mix the rice with the beans and cool it down and feed it to her she will love it. You can just cook up some fajitas for you and your husband and join your daughter.

    Paula's Yummy Sun dried Tomato/Asparagus Pasta

    Ingredients:


    1 bunch of Asparagus


    1 12 oz package of spaghetti noodles


    1 bag of sun dried tomatoes


    1 lemon


    olive oil (and butter)


    dried basil


    4-5 cloves of garlic chopped


    salt


    Crushed Red Pepper Flakes


    shredded fresh parmesan











    Boil Pasta. Use a colander and steam asparagus until crisp tender while pasta


    is boiling. When asparagus is done chop into one inch pieces using the top 1/3. Boil small pan of water. Remove from heat and add sun dried tomatoes. Submerge for 30 seconds to 1 minute and then drain and set aside. Heat oil in skillet. Add garlic and crushed red pepper. Allow garlic to turn golden brown. Add asparagus and heat for


    one minute. Next add cooked spaghetti noodles. Remove from heat. Squeeze juice of 陆 - 1 lemon into pasta mixture. Toss mixture with basil, salt and sun dried tomatoes.








    Addendum: You can add shrimp to this. OR, what I do now that really makes it good is I use about 2 slices of bread that I chop up really good in the food processor. Put it in the oven till the crumbs are all crispy. Cook the garlic in oil for about 30 seconds on high. Remove from heat and set it aside for about 5 minutes. Then put back on heat with bread crumbs and cook the crumbs in the garlic oil for a couple of minutes.     HOMEMADE GRANOLA





    Ingredients:





    4 cups old-fashioned oats


    1 1/2 cup sliced almonds


    1/2 cup packed light brown sugar


    1/2 teaspoon salt


    1/2 teaspoon ground cinnamon


    1/4 cup vegetable oil


    1/4 cup honey


    1 teaspoon vanilla


    1 1/2 cup raisins or dried cranberries





    Directions:





    Preheat oven to 300 F. In a bowl mix the oats, almonds, brown sugar, salt and cinnamon. In a saucepan warm the oil and honey. Whisk in vanilla.





    Carefully pour the liquid over the oat mixture. Stir gently with a wooden spoon; finish mixing by hand. Spread granola in a 15x10 inch baking pan.





    Bake 40 minutes, stirring carefully every 10 minutes. Transfer granola-filled pan to a rack to cool completely. Stir in raisins or cranberries. Seal granola in an airtight container or self-sealing plastic bag. Store at room temperature for 1 week or in the freezer for 3 months.
    I've started to bring just an ordinary whole grain sandwich with butter to school when we have longer days, really helps me to stay focused.





    I like the granola idea, how about some granola bars? I think I'm gonna make some and take to school. You can add all sorts of dried fruits and berries, and dip some in dark chocolate too. Yummy!

    At that age, you still want to do mostly just singe fruits and veggies. So for any of the following, steam them until soft, then mash well or puree with a little bit of water to thin:


    apples, pears, winter squash, sweet potato, green peas, green beans (peas and beans you might need to put through a strainer to get rid of the chunks), carrots (better after 6 months because of nitrate)





    Bananas and avocado don't need to be cooked and can just be mashed with a fork when ripe





    Canned pumpkin and unsweetened applesauce from the store can be fed to your baby - just read the ingredients.





    All of the above can be frozen in ice cube trays and stored in freezer bags for up to 3 months. Otherwise you should use it in 2-3 days if you are just refrigerating.





    Once your baby has had the single flavors, the best meals are just to mix the fruits and veggies - so like a cube of apple and a cube of pear, or pear-avocado, or apple-sweet potato. You can also add basic spices like cinnamon (introduce it just like any new food), and you can also mix baby cereal into the fruits - so apple-cinnamon oatmeal, for example. The main thing to remember is no extra salt or sugar!

    My son really likes sweet potato, winter squash, butternut squash and carrots. The nice thing about most of those is that you can roast and bake them at the same time and get a good portion of his meals cooked and mashed in an hour and a half or two hours. Some of his favorite combinations are peas and carrots, corn and squash, apples and squash, banana mixed with his baby oatmeal, Prunes and oatmeal (I buy the Earth's Best Organic Brand. I'm not sure how to puree a prune on my own :O) It's interesting to me that he prefers vegetables over fruit. I was always warned by well meaning relatives that if I started fruit first he would never eat the veggies. It seems every child's tastes are just different right from birth. I hope your little one likes some of these combos!
    I would just puree or mash up fruits and veggies. My daughter loved sweet potatoes and you can mash up pretty much any veggie or fruit. I wouldn't give citrus fruits yet. The meals don't really have to be complete meals since breast milk or formula should be their primary source of food and nutrients.

    There are all kinds of Low salt food recipes online. It is where I've gotten all of mine.
    Honestly, I just do not add salt when I'm cooking. I know it sounds overly simple, but I think it works for me.
    Just use real good sea salt from a health food store. It's much healthier than the iodized salt you get in the grocery store, and I find that it has so much more flavor, that you don't have to use as much.

    Caribbean Bar Nuts - Low-Carb - No Salt Added








    64 servings 4 cups 25 min 5 min prep


    1 lb pecan halves or pecan pieces (4 cups)


    SEASONING MIX


    1/4 cup Splenda sugar substitute, for Baking or granulated sugar


    1/2-1 teaspoon curry powder


    1/4-1/2 teaspoon cayenne pepper


    2-3 teaspoons soy sauce


    1/2-3/4 teaspoon garlic powder


    1/4-1/2 teaspoon ground cinnamon


    DRY COATING


    2-3 tablespoons Splenda sugar substitute, for baking





    ***NOTE: ';Splenda for Baking'; is measured spoon for spoon like sugar, but contains less than 1 carb per tsp. It is not the Splenda in little packets.


    Preheat oven to 325 degrees.


    Place pecans in single layer on baking sheet.


    Roast 15-17 minutes or until lightly golden brown and slightly crunchy.


    In large bowl, add the Dry Coating mix (Splenda)


    Set aside.


    About 5 minutes before pecans are done, in a saucepan add ALL Seasoning Mix ingredients and bring just to boil. It may not seem like enough sauce; however, it should be enough to coat the outside of all the nuts.


    Immediately add hot nuts and stir continuously until all liquid has been absorbed and no liquid remains on bottom on saucepan.


    This will take about 1-2 minutes.


    Pour nuts into Dry Coating mix bowl and stir to coat nuts.


    Pour nuts onto a Silpat silicone mat, parchment or waxed paper, separating nuts.


    Cool.


    Store in air-tight container.


    Would keep for weeks, but they won't last that long.


    VARIATION: Mix these nuts with craisins (or raisins), butterscotch chips, and mini-pretzels for a delicious Bar Mix appetizer.











    Caribbean Coconut Chicken Bites With Mango Cream








    The Mango cream is key to these, so don't forget to dunk them! Be careful not to cut the pices to large, it is raw chicken and must be cooked through, so if you cut them to large the coating will burn.














    4-6 servings 35 min 30 min prep








    Chicken


    1 1/2-2 lbs boneless skinless chicken, cut into bite size pieces


    2 1/4 cups flour


    3 tablespoons sugar


    1/2 teaspoon salt


    1 1/2 cups milk (may need more if the batter is to thick)


    1 tablespoon rum extract


    1 tablespoon coconut extract


    4-5 slices white bread


    3/4 cup flaked coconut


    oil (for frying)


    Mango Cream for dipping


    1 large ripe mango, pealed and pitted


    1 cup sour cream


    1 tablespoon coconut extract


    1/3 cup sugar











    Mango cream:.


    place the mango in a mini food processore and pulse till it is a pulp.


    Scrape all of this into a bowl adding the sour cream, sugar, and extract. Mix well and set aside. Do not refridgerate this, it is best served at room temperature.


    For Chicken -- in a bowl place 1 c plus 2 T flour and set aside.


    In another bowl place the remaining flour (1c plus 2 T), sugar, and salt.


    Stir milk and extracts into this. The mixture should resemble a thin pancake batter (you may have to add a little more milk).


    Set this aside.


    Place the bread slices in a food proccesor and pulse till you have fine crumbs, measure out approx 1-1/2c.


    Place these on a pie pan and place in a 350 degree oven till lightly toasted and dried out.


    Mix toasted bread crumbs in a third bowl with the coconut.


    Preheat a deepfryer with oil according to the directions of the fryer.


    Place a cooling rack on a large cookie sheet and cover the rack with paper towels.


    Now one at a time drag each chicken bite through the pan with just flour, then using a slotted spoon drop it into the milk mixture coat well and use the spoon to retreave it.


    Drop the coated bite into the coconut mixture being careful not to get to much of the excess wet mixure into the coconut. cover evenly with the coconut mixture and set on a second cookie sheet.


    After all the chicken pieces are ready begin to cook them in the hot oil. Just do a few at a time to keep your oil fromm cooling to much and becoming gummy. The heat time will varry a great deal on this because it is raw meat and it depends on how big of chunks you make them. Make sure they are cooked completly, you may want to test the first one out and see how long it takes to get it done thouroughly.


    I cook mine for approx 5 minutes and the batter should turn a nice golden brown.


    Remove from oil and drain on the cookie sheet that has been preparred with paper towels. Serve with mango cream.A good carribean finger food recipe?

    Pasta with cauliflower and peas. Cut up your cauliflower into bite sized pieces cook your pasta according to the intructions add the cauliflower for the last 5 minutes of coooking time add your peas for the last minutes. Drain the pasta add olive oil, lemon juice and salt and pepper to taste sprinkle with nutritional yeast and some toasted bread crumbs if you like. You can also make a gratin by cooking your cauliflower dressing it with Italian dressin topping with buttered bread crumbs and baking. I like this with curried peas.     mushroom stroganoff


    1tbsp virgin olive oil


    1 bunch spring onions, chopped


    2 cloves garlic, crushed


    6oz / 150g large open mushrooms, sliced


    6oz / 150g open cup mushrooms, quartered


    6oz / 150g closed cup mushrooms, halved


    6oz / 150g button mushrooms


    6oz / 150g chestnut mushrooms, thickly sliced


    陆pint / 250ml semi-skimmed milk


    录pint / 190ml white wine


    4tbsp fresh parsley, chopped


    salt and pepper


    3 tbsp cornflour


    4tbsp fresh soured cream


    To serve: cooked brown rice (allow 2oz / 50g per person)


    To garnish: sprig of fresh parsley





    1. Heat the oil in a large pan and cook the spring onions and garlic for 2 minutes.





    2. Stir in all the mushrooms, milk, wine, parsley and seasoning and bring slowly to the boil. Cover, then simmer gently for 10 minutes.





    3. Meanwhile, blend the cornflour with a little cold water until smooth, then stir into the mushrooms. Bring to the boil, stirring. Remove from heat then stir in the soured cream. Return to the heat and heat through gently but do not allow mixture to boil. Serve with cooked brown rice and a green salad. Garnish with parsley.





    Follow with bananas baked in foil with brown sugar and cinammon

    Falafel with pita and tahini- and actually the boxed falafel mix from Good Earth is great- just mix it up, let it sit for 30 minutes or so, form patties and fry it in just a bit of oil- put it on a toasted pita with some tahini or hummos and add a side of diced cucumber and tomato salad- yum...
    boiled cabbage is very tasty and incredibly nutritious especially if boiled for about 4 hours

    Directions





    Prepare all the ingredients. Remove the outer layer of the lemongrass stalks and cut off the end. Cut into 1-2鈥?pieces and smash with the side of a heavy knife to release flavor.





    Tear the center vein off the lime leaves. Slice your galangal into thin slices. Cut the tomato into 6 pieces lengthwise. Peel the skin off the shallots and smash lightly. Clean your coriander roots well. Smash the fresh chilies with the back of a heavy knife, or in a mortar and pestle. If using fresh Thai straw mushrooms, slice the bottoms off and cut in 1/2 lengthwise. If making the version with milk: roast the dried chilies until fragrant and browned in a dry wok on medium heat





    Clean the shrimp by peeling off the backs and snapping off the top part of the heads, but leave the fat on at the base of the head (the reddish brown goop). This is very important, as that fat imparts a signature flavor into Tom Yum Goong. Don鈥檛 discard it. Then, peel out the legs + intestine underneath, but leave the tails on. Set aside.





    Boil the broth on high until it comes to a rapid boil. (see note about broth below). Add the lime leaves, lemongrass, coriander root, galangal and tomato. Boil for 4-5 minutes until the broth tastes herbal. if you鈥檙e using fresh ingredients, 4-5 minutes should be enough. In a separate pan, boil the mushrooms in plain water.





    After you鈥檝e boiled 4-5 minutes, add a pinch of salt and the shrimp. Strain the cooked mushrooms and add them to the soup as well. Cook until shrimp turn pink, about a minute.


    Add the fish sauce and remove from heat. You will now season the soup.





    Add lime juice, chili paste, smashed fresh chilies. Taste the soup. Is it sour? Is it salty? If no, add a bit more, 1/4 teaspoon at a time.





    If making the version with milk: Add the milk and dried chilies. If doing this step you鈥檒l need to add a bit more lime juice and fish sauce as the milk tames it down a bit. Add about a teaspoon more of each.


    Add cilantro and serve.





    This soup is best served really hot!

    Chicken and Pineapple curry


    Serves 4





    400 g (13 oz) chicken fillets





    1 ts chilli paste


    600 ml (20 fl oz) coconut milk


    300 g (10 oz) canned pineapple pieces


    1 tb brown sugar


    1 tb fish sauce











    1. Slice chicken, drain pineapple pieces.


    2. Bring half of the coconut milk to boil and add chilli paste.


    3. Add chicken and heat.


    4. Add pineapple, sugar, fish sauce and the rest of the coconut milk and stir.


    5. Simmer for 15 minutes.

    Pawpaw Salad


    Serves 4





    1 green pawpaw


    4 long green beans


    3 tomatoes


    3 tb unsalted peanuts


    3 clove garlic


    1 Kaffir-lime


    2 ts chilli paste


    1 tb palm sugar


    1 tb fish sauce


    6 dried shrimps





    Takes 30 minutes





    Peel pawpaw, cut into half, take out the seeds.


    Dice pawpaw into small pieces.


    Cut beans into 1 cm long pieces, dice tomatoes, chop peanuts, peel garlic.


    Mix and chop chilli paste, garlic, palm sugar, fish sauce, shrimps and 1 tb of the pawpaw in a food processor.


    Add this paste to the rest of the pawpaw, beans, tomatoes and peanuts and season with lime juice

    Spicy Prawn Soup


    Serves 4





    200 g mushrooms


    2 spring onions


    16 peeled prawns


    1 l chicken soup stock


    3 tbs lemon juice


    1 ts chili paste


    3 tbs fish sauce


    1/2 Kaffir-lime





    Takes 20 minutes





    In a pot bring chicken soup stock to boil.


    Cut mushrooms into half. Cut spring onions into 2 cm long pieces. Wash prawns.


    Add lemon juice, chilipaste and fish sauce to the chicken soup stock and stir.


    Add mushrooms, spring onions and prawns and let simmer for ten minutes.


    Reduce heat and season with Kaffir-lime juice.

    Hyderabadi biryani





    * 1 kg: Meat


    * 750 gm: Semi cooked rice


    * Saut茅ed brown onions to taste


    * 1 tbsp: Ginger garlic paste


    * 1 tbsp: Red chilli paste


    * 1 tbsp: Green chilli paste


    * 陆 tbsp: Cardamom powder


    * 3-4 sticks:


    * Cinnamon


    * 1 tbsp: Cumin seeds


    * 4-5: Cloves


    * 2 tbsp: Lemon juice


    * 250 gm: Curd


    * 4 tbsp: Clarified butter


    * A pinch: Mace


    * Mint leaves to taste


    * 1 tsp: Saffron


    * 陆 cup: Water


    * 1 tbsp: Salt


    * 陆 cup: Oil





    Method





    1. Clean the meat.


    2. Now in a pan add meat, salt, ginger garlic paste, red chilli powder, green chilli paste, saut茅ed brown onions, cardamom powder, cinnamon, cumin seeds, cloves, mace, mint leaves and lemon juice. Mix it well.


    3. Add curd, clarified butter, semi cooked rice, saffron, water and oil and mix it well.


    4. Now apply sticky dough on the sides of the pan.


    5. Cover with lid to seal it and cook for about 25 minutes.


    6. Hyderabadi Biryani is ready to eat.


    7. Garnish with boiled eggs, sliced carrot and cucumber.


    8. Serve hot.





    Mysore Pak





    Ingredients


    Mysore Pak





    * 1 cup: Besan


    * 1 1/2 cups: Sugar


    * 2 cups: Ghee


    * 1 3/4 cups: Water


    Method





    1. Dissolve the sugar in the water and heat it.


    2. Keep stirring till you get a single thread consistency. You can check for this by feeling the syrup between your fore-finger and thumb. If the syrup has reached the required consistency, then you will able to pull it out like a thread.


    3. Remove all the lumps in the besan and add it to the syrup, 1 table spoon at a time.


    4. Reduce the heat and add 2 teaspoons of ghee.


    5. Stir, till the flour and ghee has completely blended with the syrup.


    6. Continue to stir and keep adding ghee 1tsp at a time till the mixture changes color and texture. At one point, you will observe that the mixture is not able to absorb any more ghee. Also, the whole mixture becomes porous and starts leaving the edges of the vessel.


    7. At this point, transfer the mixture into a greased plate and with a spatula press the mixture down till the excess ghee surfaces. Do not remove the excess ghee.


    8. Allow it to cool for 10 minutes.


    9. Cut it into desired shape and wait for another 10 minutes.





    Chettinad Chicken





    Ingredients


    Chettinad Chicken





    * 1 kg: Chicken


    * 1 1/2 cup: Onion


    * 1 cup: Tomato


    * 20 cloves: Garlic


    * 1 big piece: Ginger


    * 2 tsp: Pepper


    * 2 tsp: Cumin seeds


    * 2 tsp: Fennel (Jeera)


    * 录 cup: Coriander Powder


    * 陆 small cup: Chilli Powder


    * Cloves (lavangam) as required


    * Tamarind as required


    * Salt


    to taste


    * 5 tsp: Oil


    Method





    1. Wash the chicken and cut to pieces.


    2. Mince garlic and ginger.


    3. Powder pepper, cumin seeds and fennel together.


    4. Fry the powders lightly and keep aside.


    5. Season cloves in oil in a frying pan, add onion and tomato.


    6. Saut茅 well adding minced garlic and ginger.


    7. Add chicken with little turmeric


    powder and cook for 10 minutes.


    8. Add chilli /coriander powders, salt and mix well.


    9. Pour 4 cups of water and boil.


    10. When chicken is half boiled, add the half fried pepper, cumin seed and fennel powder and mix well.


    11. When the gravy thickens to a paste, remove from fire.


    12. Serve hot.





    Masala Vada





    Ingredients


    Masala Vada





    * 1/2 cup: Toor Dal


    * 1/2 cup: Channa Dal


    * 1 tbsp: Urad Dal


    * 1 large: Onions (finely chopped)


    * 5-6: Red Chillies


    * 1'; inch piece: Ginger


    * A few: Curry leaves


    * Oil for deep frying


    * Salt


    to taste








    Method





    1. Soak all dals together for an hour.


    2. Grind all ingredients except onions to a coarse paste.


    3. Heat oil for deep frying.


    4. Add onions to the paste.


    5. Shape like Vada and deep fry.

    my son is 9 months old also, and i fix him mashed potatoes (plain with just butter). he loves those. also, i give him the Gerber toddler snack crackers. those are a life saver, especially when we take him to the movies, or when he smells OUR food, and just wants something to munch on. i basically give him food with no spices or lots of sugar.
    If he is able to eat ceral like Cheerios then you should try that .
    I got a KidCo grinder (available in some stores and on-line) and LOVE IT! It turns regular ';people food'; into baby smush in no time! It's easy to use, and easy to clean. Mine came with a case, so I can toss it in the diaper bag and take it with us to restaurants, grandma's, church, wherever and my son can have fresh foods with a variety of flavors.





    They're about $15 and worth every penny. Get one ASAP!
    Really, we just got a food processer and threw whatever we were eating in there and gave it to our kids once they were old enough to kinda chew and had gone through all the jar foods.
    Anything homemade. we started Jordan of on jars but he started to reject them so we would give him smaller portions of what we would have. bangers and mash, spaghetti bolognaise, Shepard's pie, meatballs in tom sauce, Anything pasta, anything fish but not a strong fish, anything potato. Roast dinners are good but might find pork or beef a bit hard to eat at first, but if you are going to do por or beef give him a small chicken breast and some of the pork or beef just remember if he says he does not like it don't panic always have a back up. Jordan would eat anything except oranges and Chinese food but we never found that a problem just adapt your meals around your child and you will start to find things he will eat. Also have him eat meals with you and your partner as he will develop table manners and possibly eat his meals More readily as he will see you and your partner doing it. good luck and maybe if you could take a trip to your local libary you may be able to find a book which can help you. we found one full of recipes and this worked a treat one my partner and our son
    I feed my baby everything I eat (unless it contains honey, dairy, wheat or nuts), always have.

    Prep Time: 15 minutes


    Cook Time: 14 minutes


    Ingredients:


    1 cup mung bean sprouts


    1 yellow onion


    2 large carrots


    1 cup shredded Napa cabbage


    3 to 4 fresh chili peppers, or to taste


    2 cloves garlic


    1/4 pound barbequed pork


    2 Chinese sausages (lop cheong)


    6 ounces peeled and deveined fresh medium shrimp


    1 pound fresh rice noodles


    2 tablespoons oyster sauce


    1 tablespoon soy sauce


    1 tablespoon dark soy sauce


    1 teaspoon brown sugar


    3 tablespoons oil for stir-frying


    3 eggs, lightly beaten


    Salt and freshly ground black pepper, to taste


    1 tablespoon chopped fresh cilantro leaves


    Preparation:


    Rinse and drain the mung bean sprouts. Peel and chop the onion. Peel the carrots and cut on the diagonal into 1/4-inch pieces. Shred the cabbage. Cut the chili peppers in half lengthwise, remove the seeds and finely chop. Peel and finely chop the garlic.





    Cut the barbequed pork into thin pieces. Cut the sausages on the diagonal into 1/2-inch pieces. Steam the sausages for about 10 minutes. Soak the shrimp in lightly salted warm water for 5 minutes.





    In a small bowl, mix the oyster sauce, light and dark soy sauce and brown sugar. Set aside.





    Heat 1 tablespoon oil in a wok over medium heat. Add eggs and scramble. Remove. Heat 2 tablespoons oil in a wok over medium-high heat. Add onions and carrots and stir-fry until the onion is softened. Add the chiles and garlic and stir-fry until fragrant. Add the shrimp and stir-fry unti they turn pink. Add the sausages and the barbequed pork. Stir in the cabbage. Remove and clean out the wok.





    Heat 1 tablespoon oil in a wok over medium heat. Add the eggs and lightly scramble. Clean out the wok.





    Heat 2 tablespoons oil. Add the rice noodles and cook for 2 minutes, stirring continuously. Push up to the sides and add the sauce in the middle. Heat to boiling, then mix in with the noodles. Add the other ingredients back in the pan. Stir in the mung bean sprouts. Cook for 30 seconds then stir in the egg. Continue cooking, adding a bit of water or chicken broth if the mixture gets too dry. Season with the salt and pepper. Serve hot, garnished with the cilantro.Chinese Food Recipes?

    1) Bosnians mostly don't eat pork because they are mostly Muslims; meat for 膰evap膷i膰i is lamb or mixed lamb and beef; if you see pork recipes they are probably from Croatia or Serbia


    2) that's not burek what Desi Chef described. I don't know anything like that. Burek is a very popular food among Yugoslavians, and it's like this:


    - in Bosnia the only thing called burek is the meat burek, which uses groung meat as the filling


    - other types of burek are:


    cheese burek (sirnica in bosnia) - with cottage cheese


    potato burek (krumpiru拧a in Bosnia) - with potatos


    spinach burek


    and recently invented 'pizza burek' - cottage cheese, tomato puree

    Yugoslavian Burek (Borek) Recipe





    Ingredients:





    1 tablespoon olive oil


    1 medium yellow onion, peeled and chopped


    1 pound ground beef


    1 teaspoon allspice


    2 teaspoons Hungarian paprika


    Salt and freshly ground black pepper


    1 box phyllo pastry sheet (12 inches x 17 inches)


    3/4 cup butter, melted





    Instructions:





    Heat a large frying pan and add the oil. Saute the onion until soft, and then add the beef, spices, and salt and pepper to taste. Cook until the meat is crumbly but not dry. Cool completely before you continue.





    Lay 1 sheet of phyllo dough on the counter. Brush with some of the butter. Place a heaping 1/3 cup of meat mixture acrosss the sheet along the long side, 2 inches from edge. Fold the bottom over the meat mixture and roll into a snake shape. Cut the roll in half and coil each roll into a snail shape. Place on a nonstick baking sheet and butt the end up against the edge of the pan to prevent uncoiling. Brush with additional butter.





    Bake in a preheated oven at 375 degrees for 15 to 20 minutes or until just golden.





    Keep the remaining sheets of phyllo dough covered with plastic, and work quickly to prevent in from drying out.





    Hint on handling phyllo dough: Be sure the dough is at room temperature before you open the box. Place the sheets of dough on a large cookie sheet and cover them with plastic wrap and then a heavy towel. In this way, they will not dry out while you are working with them. Work fast for best results and do not have the butter too hot when brushing the dough.





    Yield: 18 to 20

    1 1/2 lb. ground lean pork


    1 1/2 lb. ground lean beef


    1 med. finely chopped onion


    Salt and pepper





    Knead meat together 2 times. Chill in refrigerator for 1/2 hour. Shape into thin patties or shape into little sausages. Cook on grill or under broiler on medium heat. Do not overcook. Served with chopped onions.

    PORK ROAST (YUGOSLAVIA)





    Pork roast - any size. Liberally coat with black pepper, some salt, either lots of freshly sliced garlic or garlic powder and a heaping tablespoon of caraway seeds. Place in a roaster with about a scant 1/2 inch of water in bottom. Cover and bake at 350 or 375 degrees until done.


    You can uncover the roast for the last 45 minutes if you desire browning. Make a gravy from the strained liquid, if desired.

    Well, it depends on what kind of food you like. Sweet, spicy, etc? For sweet I'd probably recommend rice cakes/dumplings called songpyun. I'm not too sure if there's a recipe for it floating around online. For spicy, there's ddukbokee. Take plain rice cakes, some vegetables, and cook it in a sauce made from a mixture of water and hot pepper paste (gochujang). It's very yummy. There's packages at Korean markets with the rice cakes and already-made sauces, so you could also buy those and cook it.


    Or probably kimchee. There's various ways of making it. Or you could just buy it.

    Mom's Big Burgers


    Ingredients


    2 pounds lean ground beef


    1 (1 ounce) envelope dry onion soup mix


    1/2 cup water


    2 cloves garlic, chopped


    1 tablespoon hot pepper sauce


    1 pinch chili powder


    1/4 teaspoon ketchup


    1/4 teaspoon prepared yellow mustard


    1 pinch ground black pepper


    4 cracked wheat hamburger buns


    4 slices pepperjack cheese


    1 avocado - peeled, pitted and sliced


    1 bunch green onions


    Cooking Instructions


    Preheat the oven's broiler.





    In a large bowl, mix together the ground beef, onion soup mix, water, garlic, hot pepper sauce, chili powder, ketchup, mustard and pepper using your hands. Pat into 4 large thick patties. Place them on a broiler pan.





    Broil the burgers for about 15 minutes per side, or until well done. Place buns on the broiler pan and toast briefly. Place whole green onions on the broiler pan at the same time, and just toast until limp.

    Buy meatloaf mix (the three meats: veal, pork, beef) and make burgers from that. Mix in a little Worcestershire sauce and they be the juiciest burgers you ever tasted. No onion soup mix, no breadcrumbs, nothing. You aren't making meatloaf. People always compliment my burgers at a cookout.
