Cornbread Casserole --
INGREDIENTS
1/4 pound butter, melted
1 (15 ounce) can whole kernel corn
1 (15 ounce) can creamed corn
1 (8.5 ounce) package corn bread mix (Jiffy)
8 ounces sour cream
1 1/2 cups shredded cheddar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, combine butter, whole corn, cream corn, corn muffin mix and LASTLY sour cream. Fold all ingredients together, pour into 2 quart casserole dish. Bake for 1 hour. Top with cheese and bake until melted.

Tasty Collard Greens --
INGREDIENTS
1/4 cup olive oil
2 tablespoons minced garlic
5 cups chicken stock
1 smoked turkey drumstick
5 bunches collard greens - rinsed, trimmed and chopped
salt and black pepper to taste
1 tablespoon crushed red pepper flakes (optional)
DIRECTIONS
Heat olive oil in a large pot over medium heat. Add garlic, and gently saute until light brown. Pour in the chicken stock, and add the turkey leg. Cover the pot, and simmer for 30 minutes.
Add the collard greens to the cooking pot, and turn the heat up to medium-high. Let the greens cook down for about 45 minutes, stirring occasionally.
Reduce heat to medium, and season with salt and pepper to taste. Continue to cook until the greens are tender and dark green, 45 to 60 minutes. Drain greens, reserving liquid. Mix in red pepper flakes if desired. Use liquid to reheat leftovers.

Pecan Pie --
INGREDIENTS
1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tablespoon all-purpose flour
1 tablespoon milk
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done.Can someone give me southern food recipes??
Momma's Fried Catfish
Ingredients:
1 pound of fillet catfish
1 cup of corn meal
1 cup of flour
1 teaspoon of Lawry's庐 Seasoned Salt
1 teaspoon of Pepper
Instructions:
Mix flour, seasoned salt, and corn meal and cover both sides of catfish strips with the dry mixture.
Then fry in about a teaspoon of oil in a pan, until both sides are golden brown and the fish is crispy.
Granny's Fried Corn
Ingredients:
6-8 Large Ears of sweet Yellow corn (Frozen Corn may be substituted)
2 Large Green Peppers Diced
1/2 cup all purpose flour
1 tablespoon sugar
salt and pepper to taste
1/2 cup shortening (cooking oil may be substituted)
Instructions:
Shuck and de-silk the ears of corn, then rinse.
Using a sharp knife remove the kernels from the cob, scraping to get it all.
Mix green peppers, flour, sugar, salt and pepper together coating the corn well with the mixture.
Heat shortening or oil until one kernel dropped in it sizzles.
Put your corn in the skillet and fry until the corn is tender and the flour starts to brown.
Stir frequently to prevent the flour from sticking.
HINT: You may want to cover the skillet with a lid to help tenderize the corn evenly.
Mississippi Red Beans
Ingredients:
1 pack of red kidney beans
3 teaspoons bacon drippings
4 cloves of garlic (chopped)
2 large ham hocks (raw, not smoked)
1 onion (chopped)
1 bell pepper (chopped)
1 package of sausage (preferably spicy)
salt
pepper
cayenne or red pepper
Instructions:
Place beans in container with just enough water to cover.
Soak for 2 hours or until beans begin to plump and wrinkle.
In large pot, place the soaked beans, chopped garlic, bacon drippings, ham hocks and about 3 1/4 cups of water.
Bring to a boil.
Then, reduce heat and let simmer for one hour and thirty minutes or until the meat of the ham hocks begin to loosen from the bone.
At this point, add chopped onion, chopped bell pepper and sausage.
After, add salt and black and red peppers to your liking (because of the bacon drippings and ham hocks, only a moderate amount of salt is needed, the peppers depend on your tolerance of spicy food).
Turn up heat and bring to boil.
Then reduce heat and let simmer for another hour.
Let sit for about 15 to 20 minutes and then your ready for some ';good ole red beans';.
Comments: The secret to good, thick ';bean gravy'; is not to add any more water after the first three cups. Serve with rice and enjoy! And don't forget the cornbread.
Carrot pecan cake
INGREDIENTS:
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup vegetable oil
2 eggs
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons vanilla extract
1 cup finely grated carrots
3/4 cup finely chopped pecans
whipped cream or whipped topping for garnish, or frost with cream cheese frosting
PREPARATION:
Preheat oven to 300掳. Grease and flour a 9-inch square baking pan. In a large mixing bowl with electric mixer at medium speed, beat flour, sugar, oil, eggs, baking powder, cinnamon, salt, and vanilla until smooth and well blended. With a wooden spoon, stir in grated carrots and pecans. Pour batter into prepared pan. Bake for 45 to 50 minutes, until cake pulls away from sides of pan. Cool and cut into squares. Serve with whipped cream or whipped topping.
Serves 12 to 16.
Hot chicken salad
A hot chicken salad with almonds, mayonnaise, cheese, and other ingredients.
Cook Time: 20 minutes
Ingredients:
2 cups chicken, chopped
1/2 cup chopped water chestnuts
celery salt, to taste
1 cup shredded Cheddar cheese
1 cup mayonnaise
1/2 cup sliced almonds
2 ounces chopped pimiento, drained
salt and pepper, to taste
1 small can French fried onion rings
Preparation:
Mix all ingredients except French fried onion rings; put in shallow greased baking dish. Cover with onion rings and bake at 350掳 for 20 minutes.
Serves 4.
