Almost any food can be 'soft food' if put in a blender with broth. And don't forget a wonderful consomme, a beef or chicken broth with gelatin added. Here are some recipes.

(Oh, and I TOTALLY agree with the Ensure suggestion above. There are a couple other good fortified drinks besides such as Slim Fast and Carnation Instant breakfast. I forgot that! There is a drink called Ensure that has all the vitamins,protein etc. that the elderly need.Very nourishing.
They can drink it with their meals or use as a substitute/snack.Many flavours to choose from.
I cooked in a nursing home for 18 years and we used this daily.
Soft foods consist of the following.
Cream of wheat or oatmeal cereal.
Custards and puddings
Soft boiled,poached or scrambled eggs
Mashed potato
Or yogurt to name a few.
If you have a food processor,you can puree meats and veggies which they can tolerate along with fruits(preferrably tinned) and even desserts such as cake etc.It may not sound too good but it is.
Add water,milk or juices to whatever it is you're pureeing until it is the consistency of baby food.Just a little at a time.You can even add broth to meats for extra flavour such as Campbells chicken or beef broth.
If you wish,you can put it in portion sized containers and freeze for further use.For example,if you cook a roast beef,make up a few portions and freeze.
Good instant potatoes are also great if you're not having potato.Use milk instead of water to make them and add a little butter and seasoning.

mix tofu with boiled veggies e.g. brocoli, carrots, potatoes...even beans tehn make patties and fry them in olive oil or heat them in an electric oven for 12 minutes. Since tofu is made of soy milk, they will remain very soft.
Also drink KEFIR which is a natural lactobacilo (yogurth-like) you can put it in the blender with fruit such as mango, strawberries or banana. Champurrado is a grat option before going to bed. Mix soft corn dough (1cup) with water (3 cups) and milk (1cup) and add chocolate move slowly while on the stove let it boil and drink hot...lots of vitamin c and iron!
