Hi there..
My sister is pregnant with twins and has developed diabetes during her pregnancy, so it is hard for her to eat what she wants. I am throwning a baby shower for her in a couple weeks and was wondering if anyone had suggestions for diabetis food recipes? (no seafood please...it makes her want to vomit at the sight of it)

People with diabetes can eat regular food, but they just need to watch their carbs. So make all the grains you serve, whole grains, like brown rice, whole grain rolls, and whole wwheat pasta. Try to serve plenty of veggies, and limit the refined sugar.
Appetizer...You could make pinwheels using whole grain wraps, garic and herb cream cheese, and cold cuts. Roll them up and slice into pinwheels. Fresh tomato salsa is fine for diabetics. You could also serve this great hummus with whole grain pita chips...
***Spiced Sweet Roasted Red Pepper Hummus***
1 (15 ounce) can garbanzo beans, drained
1 (4 ounce) jar roasted red peppers
3 tablespoons lemon juice
1 1/2 tablespoons tahini
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 tablespoon chopped fresh parsley
DIRECTIONS
In an electric blender or food processor, puree the chickpeas, red peppers, lemon juice, tahini, garlic, cumin, cayenne, and salt. Process, using long pulses, until the mixture is fairly smooth, and slightly fluffy. Make sure to scrape the mixture off the sides of the food processor or blender in between pulses. Transfer to a serving bowl and refrigerate for at least 1 hour. (The hummus can be made up to 3 days ahead and refrigerated. Return to room temperature before serving.)
Sprinkle the hummus with the chopped parsley before serving
You could make skewers of shrimp or chicken. Cook some skewers of veggies, like peppers, onions, mushrooms and tomatoes seperately.
***Barbadian Chicken Skewers***
4 cloves garlic
1 onion, cut into 6 wedges
2 habanero peppers, seeded
1 bunch green onions, chopped into 1 inch pieces
1 tablespoon dried thyme
1 1/2 teaspoons ground allspice
1 inch piece fresh ginger root, peeled
salt and pepper to taste
3/4 cup rum
3/8 cup dark molasses
4 limes, zested and juiced
4 boneless skinless chicken breasts, cut into 1 inch pieces
DIRECTIONS
Place garlic, onion, habanero peppers, green onions, thyme, allspice, and ginger into the bowl of a food processor; blend until smooth. Season to taste with salt and pepper. Transfer mixture to a large, non metallic bowl, and stir in rum, molasses, and lime zest and juice. Place chicken in bowl, and turn to coat. Cover, and marinate for 24 hours.
Preheat grill for high heat.
Remove meat from marinade, and thread onto skewers. Boil marinade in a small saucepan for at least 3 minutes.
Brush grate with oil, and arrange skewers on hot grate. Slowly cook the chicken until slightly charred and cooked through, brushing with the marinade every time you turn the meat.
***Tiramisu for Diabetics Too***
1 8 oz pkg cream cheese, softened
3 cups cold skim milk
2 pkg (4 serving size) vanilla flavor sugar free instant pudding and pie filling
1 8 oz tub sugar free whipped topping, thawed and divided
48 sugar free vanilla wafers
1/2 cup brewed strong decaffeinated coffee
2 squares unsweetened baking chocolate, coarsely grated, reserve 1 teaspoon
Method
Beat cream cheese in large bowl with electric mixer until creamy. Gradually beat in milk. Add both dry pudding mixes and mix well. Stir in 2 cups whipped topping. Line bottom and sides of a 2 1/2 quart bowl or trifle dish with half the vanilla wafers. Pour 1/2 of coffee over wafers. Layer 1/2 pudding mixture on top of wafers and top with 1/2 of grated chocolate. Repeat layers starting with vanilla wafers, drizzle with coffee, etc. Top with remaining whipped topping, a teaspoon grated chocolate, and fresh berries, if desired. Refrigerate at least 2 hours before serving. Leftovers should be stored in refrigerator.
